you usually have two options, you either go for your Cavalry and then you add in 3 PCs fast,
that's the Mystic Dio style, you go 3 PCs fast and you defend with a workshop and you mask Scorpions.
The few Knights are like half that you make, only make a few of them and use them to snipe enemy units,
like reinforcements, snipe monks, snipe his manganelles if he goes for them, raid him if he's open, etc.
And you want to get a really good economy and then boom towards either a castle drop or just imp, depending on the situation.
That's a mystery of your style. Otherwise, the easier style of play is just play archers and scrims opening.
Play mid-armors and archers against any civ that has good CA.
And you can transition back to cavalry and imp. It doesn't have to be early game.
